This plant-based, refreshing recipe is adapted from Recipe Runner.
The perfect cold treat for a hot summer day. A layer of fresh strawberry-coconut purée is swirled tasty toasted coconut for a delicious dairy-free popsicle!
- 12 ounces strawberries
- lemon juice squeeze
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 3 ml (60mg) Plant People Mind+Body Drops
- Pinch salt
- 1 can coconut milk
- 1/4 C toasted coconut
- In a high-speed blender, combine the all of ingredients, except for the toasted coconut, and purée until smooth.
- Fold in toasted coconut
- Pour into popsicle molds and freeze until solid.
